A curated local-maker marketplace at 17002 Mainstreet, Suite L on Parker's Mainstreet — home goods, gifts, and specialty foods. Opened with a Parker Chamber ribbon cutting on August 20, 2026.
High Definition Collective
A beauty & wellness collective on Mainstreet (19751 E Mainstreet, Suite 253, Parker Station) housing independent lash, wax, esthetics, and permanent-jewelry studios; opened Aug 9, 2026.
JP Cocina & Cantina
A Mexican restaurant and cantina from Jose Poblano of El Poblano Mexican Eats and The Perfect Time Cafe, now open at 11160 S Pikes Peak Dr in Parker, in the old Wild Goose Saloon. Grand opening was August 19, 2026. Open 10am to midnight every day per its website, which now lists a happy hour and says its two live music stages run every night.
Legends Coffee
Family-run coffee shop on Mainstreet (opened April 4).
Marvin's Place
New spot at The Juniper on Mainstreet.
Playa Bowls
Açaí bowls and smoothies at 19865 Mainstreet.
Poulette Bakeshop
James Beard-nominated bakery, relocated to a new spot on Mainstreet.
Rugby Scott
Family-owned butcher on Mainstreet with American Wagyu and Black Angus, a deli counter, and specialty grocery, in the old Chamber building at the Pikes Peak Drive corner.
Salady
Korean salad franchise, now open at 9700 S Parker Rd, Unit 700 in Parker Gateway Marketplace. The grand opening was Saturday, August 22, 2026.
Shake Shack
Parker's first Shake Shack opened August 12, 2026 at 9185 Crown Crest Blvd, in the former Wendy's space. Open 10am to midnight Sunday through Thursday and 10am to 1am Friday and Saturday, per Shake Shack's location page.
Highlands Ranch
Black Rock Coffee – Highlands Ranch University
Coffee and customizable Fuel energy drinks at 9401 S University Blvd; Highlands Ranch's second Black Rock (opened Sept. 14, 2026).
Egg Harbor Cafe
Breakfast and brunch; the chain's first Colorado location.
Graze Craze
Handmade charcuterie boards for events and celebrations at 2670 E County Line Rd, Unit I; one of seven Colorado shops on Graze Craze's locations page.

Upscale Italian restaurant from the family behind Farro Italian Restaurant, officially open as of early September 2026 at 361 Village Square Ln Ste 130 in Castle Pines — the former Pino’s Italian Kitchen & Bar space. Walk-ins welcome, reservations recommended.
Sedalia
Encanto Mexican Kitchen
Reopened in the same Sedalia space at 5457 Manhart Ave under new management with a new menu, keeping the handmade corn tortillas and authentic Mexican flavors. Breakfast burritos daily 6-11am; lunch and dinner 11am-8:30pm.
Magic Manor
Championship magicians' Theatre of Dreams, reopened in Sedalia.
Riot BBQ
Award-winning Denver pitmasters now running the Wide Open Saloon kitchen.

A 23,622-square-foot freestanding emergency room and urgent care at the corner of Crystal Valley Parkway and Plum Creek Boulevard, with primary care offices on the second floor. Targeting fall 2026.
Border Burger Sports Bar
Burger-focused sports bar in the three-floor former Trifecta building at 810 New Memphis Ct, off I-25 near the Outlets. Opens to the public Wednesday, Sept. 30, 2026 at 11am. Beef ground in-house, hand-cut fries, Colorado craft beer.
Chicken Salad Chick
Southern chicken-salad chain under construction in The Meadows; patio and drive-thru planned.
Dunkin'
Castle Rock's first Dunkin', opening fall 2026 at 1185 Aloha Street in Founders Marketplace. Next Generation format: cold-drink tap system, mobile-order pickup area, drive-thru, daily 4am to 8pm.
HOKA
The running-shoe brand is opening a store at the Outlets at Castle Rock. Per the Outlets' own announcement: "Stay tuned for the grand opening date and more!" — no opening date yet.
King Soopers
A 100,054-square-foot King Soopers with a pharmacy and a seven-pump fuel station, going in southwest of Dawson Trails Boulevard and Gambel Ridge Boulevard. Expected to open in 2027. Castle Rock's third King Soopers.
Peak Pizza
A locally owned and operated pizzeria coming to Suite 660 at the Outlets at Castle Rock — fresh pizza, indoor seating with an arcade, and to-go ordering. Grand opening date not yet announced.
Pilates Addiction
Modern reformer Pilates studio coming to 333 Perry Street downtown. Its page says opening soon with no date; the VIP list and founding memberships (15 percent off, per the studio) are open now.
Thai Wow
An authentic, made-to-order Thai restaurant coming to 794 S Perry Street in Castle Rock (the Plum Creek Safeway center), from the two chefs behind north Denver's Country Thai — now targeting an opening toward the end of 2026, per the owner (9/16).
Parker
Cask & Trotter
New restaurant from Wolf Peach's Jeffrey Coyle at The Juniper. Construction continues — the kitchen hood is in as of late August 2026, and the opening now looks more like end of year.
Cerebral Brewing
Denver brewery's fourth taproom coming to downtown Mainstreet (10-year lease signed; opening timing not yet firm).
GQue BBQ
Colorado's championship-BBQ chain was announced for the former Freddy's space at 18424 Cottonwood Dr in Crown Point Center; GQue's own locations page does not list Parker yet.
Kold Prairie Mead
A mead bar from the Elizabeth-based meadery, confirmed for the East Main development on Mainstreet; build-out starts October 2026.
Nova Glow Studio
A boutique reformer and hot-mat Pilates + wellness studio (infrared and red-light therapy too) at The Juniper on Mainstreet from owner Dani Saunders. Grand Opening is Saturday, October 10, 10am–1pm — free and open to everyone. Founding memberships close at the end of the Grand Opening: 50 unlimited spots at $320/month, locked for as long as you stay a member, no billing until opening.
Peaky Peak Coffee & Charcuterie
Vietnamese-coffee-and-charcuterie concept coming to East Main; a third location after Lone Tree and Denver.
SuBourbon
A whiskey bar and restaurant going into the old Chamber building at Mainstreet and Pikes Peak Drive.
The Summit Society (speakeasy)
The Summit event space at The Parker Hotel on Mainstreet is being turned into a speakeasy called The Summit Society, targeting a December 1, 2026 opening.
Wild Rose Manor
A boutique confirmed for the East Main development on Mainstreet.
Highlands Ranch
BODYBAR Pilates
Reformer Pilates studio at 9265 S Broadway, Suite 100. The announced public opening is Monday, October 12, 2026, with a founding-member preview week October 5 to 11.
Dollar Tree
A new Dollar Tree going into an existing 7,400 sq ft suite at The Plaza at Highlands Ranch, 1970 E. County Line Rd. The chain's second Highlands Ranch store. No opening date announced.
SweatHouz
A private infrared sauna + cold plunge contrast-therapy studio (SWTHZ franchise) coming to 9364 S Colorado Blvd, Suite C-2A; each suite has an infrared sauna, cold plunge, and en-suite vitamin-C shower. Founding memberships are open ahead of the studio opening, with up to $30 a month off for life per its page ([email protected]).
Lone Tree
BODYBAR Pilates
A second Douglas County location for the growing reformer Pilates franchise, coming to 9231 E Lincoln Ave, Suite 600-700, by Lincoln Station; group-based, high-intensity/low-impact classes for all levels. A VIP interest list is open now for founding-member offers. (303) 952-2434.
Castle Pines
7 Brew Coffee
A 510 sq ft drive-thru-only coffee shop with double lanes and no public seating, at the southeast corner of Castle Pines Parkway and Debbie Lane. Building and signage were up and the lot paved as of Aug. 23, 2026.
Pure Green
A smoothie and cold-pressed juice bar — acai bowls, oatmeal bowls, and toasts — coming to 858 W Happy Canyon Rd, Suite 120, in the Village at Castle Pines; construction is underway and the shop is aiming for a November–December 2026 opening.
Franktown
On A Lark Pizza Co. — rebuild + coffee drive-through & tap room
The Franktown pizza shop opened in June 2025 and closed that September. Its own site says it is temporarily closed for construction and to follow its social media for updates. No reopening date yet.

Vehicle Vault
Winding down. Espresso & Exhaust ends October 10, 2026; no museum closing date has been published.

Castle Rock
Black-eyed Pea
Southern comfort-food chain restaurant at 850 New Memphis Ct in Castle Rock; permanently closed.
Gluttony & Graze
The comfort-food spot at 221 Perry St in downtown Castle Rock has permanently closed.
Hideaway Bar & Grill
Closed after two fires in two days (May 12–13) at 600 Jerry Street; arson charged. A June 27 community benefit and a GoFundMe supported the 21-person staff. Whether it reopens is still uncertain, and its website was offline as of late September.
Inconceivable Toys & Games
The Castle Rock toy and game shop has permanently closed; its website is offline.
Jack in the Box
The Jack in the Box at 27 E Wolfensberger Rd has permanently closed, part of the chain's 'JACK on Track' plan shuttering 150-200 underperforming locations nationwide — all Colorado Springs-area stores closed in July 2026. No exact closing date was announced for Castle Rock.
Laughing Lion Herbs
The kratom, CBD and kava storefront at 4987 Factory Shops Blvd has closed its retail location; the company still sells online.
Sawara Sushi
The SaWaRa family closed their Castle Rock sushi mainstay at 312 Metzler Dr after 13 years; the final day was Saturday, August 15, 2026, with no plans to reopen elsewhere.
Sharetea
The bubble tea shop at 4991 Factory Shops Blvd near the Outlets has permanently closed.
Sip Tea
Boba and tea shop at 222 Wilcox Street in downtown Castle Rock; permanently closed January 16, 2026.
Spray
The Castle Rock spray-tan studio closed after three years; its final day of spray tans was September 15, 2026.
Stumpy's Pizza
The 25-year New York-style pizzeria at 138 S. Wilcox served its final day on Wednesday, August 26, 2026, after Rivers Church bought the building. Manager Gretchen Norton said they are looking to reopen elsewhere and that it would "just take a few months" — a new location has not been announced yet.
Trifecta Sports Bar & Grill
Sports bar with pool tables at 810 New Memphis Ct in Castle Rock; permanently closed in early August 2026.
Villa Fresh Italian Kitchen
The pizza and pasta counter in the Outlets at Castle Rock food court has closed.
Parker
Bodega Beer Company
The dog-friendly brewery and coffee shop on Hess Road has permanently closed — a temporary closure announced on their Instagram became permanent.
Freddy's – Crown Point
The Crown Point Center Freddy's Frozen Custard & Steakburgers at 18424 Cottonwood Dr has permanently closed; GQue BBQ is coming to the space. A second Parker Freddy's on Twenty Mile Rd remains open.
Wild Goose Saloon
Closed February 22, 2026; JP Cocina & Cantina is now open in the space.
Highlands Ranch
Learning Express Toys
The toy store at 9579 S University Blvd has permanently closed.
Rock Bottom Restaurant & Brewery
The Rock Bottom at 1505 Park Central Dr has closed, along with the Centennial location on E County Line Road, leaving Loveland as the only Rock Bottom left in Colorado (reported by Westword, August 2026).
Toastique
The gourmet toast and juice bar near University Blvd has closed per its Google listing, after running reduced hours through mid-2026.
Lone Tree
Native Foods
The vegan restaurant at 9996 Commons St closed in the chain's 2023 contraction, which left Glendale as the only Colorado location.
Purisima Mexican Restaurant
The Lone Tree Mexican restaurant has permanently closed.

Highlands Ranch: BODYBAR Pilates on South Broadway announced a Monday, October 12 opening, and its own studio page already lists it as open; SweatHouz is taking founding memberships on South Colorado Boulevard; and a second Dollar Tree is going into The Plaza at Highlands Ranch. Lone Tree: a second BODYBAR Pilates by Lincoln Station, and a Faherty store at Park Meadows that the brand's locator still lists as opening soon. Castle Pines: a drive-thru-only 7 Brew Coffee at Castle Pines Parkway and Debbie Lane, and Pure Green in the Village at Castle Pines aiming for November or December. Out in Franktown, On A Lark Pizza Co. is still closed for construction with no reopening date.
Castle Rock lost Stumpy's Pizza (last day August 26, looking to reopen elsewhere), Sawara Sushi (August 15, after 13 years), Trifecta Sports Bar & Grill and Black-eyed Pea on New Memphis Court, Hideaway Bar & Grill after two fires in May, Jack in the Box on Wolfensberger, Gluttony & Graze, Sip Tea, Sharetea, Villa Fresh Italian Kitchen, Inconceivable Toys & Games, Laughing Lion Herbs and the Spray tanning studio (September 15). In Parker, the Wild Goose Saloon closed in February and JP Cocina & Cantina is now open in the space; Bodega Beer Company and the Crown Point Freddy's are gone too. Highlands Ranch lost Rock Bottom, Learning Express Toys and Toastique. Lone Tree lost Native Foods and Purisima. Vehicle Vault in Parker is winding down, with Espresso & Exhaust ending October 10.
