Parker is getting a taste of Korea's salad boom. Salady — billed as South Korea's largest salad franchise, with more than 400 stores — is now open in Parker, part of the Korean chain’s expansion across the United States.
The restaurant is at 9700 S Parker Rd, Suite 700, in the Parker Gateway Marketplace, a retail center it shares with Starbucks, Einstein Bros Bagels, and Car Toys. It opened Saturday, August 22, 2026.
Here's the part that makes it more than another salad place: per Salady's own U.S. locations page, Parker is one of only two Salady stores in the entire United States. The other is in Westminster. Both are in Colorado.
I Went on Opening Day
I stopped in on opening day and had the roast pork belly bowl with the Ssamjang Mayo sauce — enjoyed it, and I’ll be back to try one of the sandwiches next.
The space is bright and compact — it seats about 30 between four 4-tops, two 2-tops, and a few lobby seats near the door. You order at the counter off two big lit menu boards, and you can either check out with someone or ring yourself up at the self-order kiosk. I used the kiosk.
The menu is wider than "salad place" suggests. Bowls come three ways — salads, bibim grain bowls, and soba noodle bowls — running roughly $10 to $14.50, in Bacon, Roast Pork Belly, Barbecue Chicken, Bulgogi, Spicy Bulgogi, Galbi, Garlic Shrimp, Roast Chicken, Cobb, Macro and Roast Tofu. There's also a build-your-own (pick a base, up to five toppings, one dressing) starting at $5.75 for greens, $6.25 for grain and $7.50 for soba. Beyond the bowls: sandwiches and bibim grain wraps, plus mushroom cream soup, corn cream soup, a mini chicken bowl and a loaded egg salad. Several items carry protein badges on the board — 25g+ or 30g+ — which is clearly part of the pitch. The tofu bowls are marked vegan-friendly.
To drink: smoothies (Mango Pineapple, Strawberry Banana, Tomato Mango, and a Double Chocolate Protein), hot or iced tea in Alpine Berry and Black Assam, and canned and bottled drinks — Coca-Cola Zero Sugar, Spindrift in strawberry lemonade, pineapple and lemon, plus Saratoga still and sparkling water.
One thing worth knowing: I spoke briefly with the franchisee's fiancé on site. This location is independently owned and not affiliated with the Salady in Westminster — same brand, different operator.

What Is Salady?
Salady started in 2013, when two college students opened a small restaurant in a back alley of Seoul — the first store was in Gangnam. At the time, the company says, the idea of salad as a main meal was almost unheard of in Korea, and plenty of people expected it not to last. It went from serving about 10 customers a day to tens of thousands, and grew into a chain of more than 400 stores. The company's own timeline marks the milestones: the 100th store in 2020, the 300th in 2022, a $25 million investment from a Korean firm in 2023, and the 400th store in 2025.
Now it's exporting that, and Colorado is where it landed first. Westminster came first; Parker is number two.
