Peaky Peak Coffee & Charcuterie is coming to the East Main development on Parker's Mainstreet, part of Confluence Companies' "My Mainstreet" redevelopment. It is a third Colorado location for the Vietnamese-coffee-meets-charcuterie concept from husband-and-wife owners Quy and Tracy Nguyen, who run the original in Lone Tree (Park Meadows) and a location in buildout in Denver's Golden Triangle.
The concept pairs Vietnamese coffee with charcuterie and a "sunrise coffee, sunset cocktails" daypart. Peaky Peak is listed among the coming-soon commercial tenants on the developer's site, and a coming-soon banner is up at the site; no opening date has been announced.
