SuBourbon Parker Opening Pushed to Around the New Year

SuBourbon, the whiskey bar and restaurant coming to downtown Parker's Mainstreet, may not open until around the new year. Construction delays have pushed back the timeline.

I walked Parker's Mainstreet this past Saturday (Oct. 10) and swung by SuBourbon, the whiskey bar and restaurant still taking shape in the old Chamber of Commerce building at Mainstreet and Pikes Peak Drive.

Word on the street: it may not open until around the new year. A floor epoxy crew was working inside when I stopped by, and even they didn't have a timeline for me. Construction delays have pushed things back.

What's confirmed

  • Location: 19590 Mainstreet Ste 101, in the former Parker Chamber of Commerce building, corner of Mainstreet and Pikes Peak Drive
  • Signage: Two SuBourbon Bar & Restaurant signs have been up on the building since late August 2026
  • Opening: No firm date yet. "Around the new year" is the current expectation, not a locked-in target
