Border Burger Sports Bar is open. I walked in at 11am on opening day, Wednesday, Sept. 30, sat at the bar, ate, and got the full tour of all three floors of the old Trifecta building at 810 New Memphis Ct.
Who's behind it
The owner is Rick Good, who also owns Border Burger Bar in Manitou Springs. He told me he's been in the restaurant business for more than 40 years, and he plans to be in Castle Rock at least half the week while things ramp up.
Border Burger started in El Paso, Texas, in 2015, per the story card on the tables, and it's locally owned, not a franchise. Sal is managing the Castle Rock location, and Courtney was behind the bar on day one.
The building still says Trifecta up top, but a temporary "Now Open" banner with the Border Burger logo is up out front now, with permanent signs to come.
What I ate
I started with the Red Bird chicken strips, which are tenderloins in their homemade batter (the chicken sandwiches use Red Bird breasts). They made a point of the chicken: it's from RedBird Farms in Englewood, which says its birds are never given antibiotics, and the bar says it's higher quality and isn't pumped full of water. They're big on that in general. Everything is made to order, and nothing is prepackaged or microwaved. That includes the onion rings: asked on Facebook whether they're frozen, the bar answered that they're made in-house.
Then the Miami, which is their hangover burger: homemade queso, a fried egg and caramelized onions. The queso is really good. The Border Burger is the most popular one, so that's next time.
I upgraded to sweet potato fries, and they brought out a side of marshmallow fluff for dipping. I'd never heard of that. I'd go back just for it.
The burgers are named for places (the Coloradan with Hatch green chile, a Rocky Mountain elk burger, the Japanese ahi tuna burger), plus brats, salads and a long list of starters. The menu says vegetarian and gluten-free options are available, including a gluten-free bun. The pretzels aren't available yet, and I've been told to come back for the Parmesan-N-Parsley truffle fries. On tap: Alidade, Breckenridge, Coors and Michelob, and the menu leans on Colorado craft beer. Happy hour is still to come.
Floor by floor
First floor: mostly how you remember it from Trifecta. Big bar, lots of seats, lots of TVs.
Second floor: the biggest change. The pool tables are gone and that space is all tables now, and they plan to open up the bar up there. There's a kids' area they'll keep adding to, a private room for about 14 people, and the second-floor balcony. Eventually the plan is a 21-plus first floor and an all-ages second floor, so you can sit with the kids or away from them.
Third floor: my first time up there, and it's the best part of the building. There's a smaller bar with views, its own balcony, and a half-inside, half-outside cigar lounge off the third floor. I can already picture it for Broncos games. They're planning to book it for holiday and Christmas parties, so if you're hunting for a venue, go look at it.
Watching games
They opened in time for football season, and NFL Sunday Ticket is now live, along with channels and streaming for college football. On opening day they were still waiting on a tech to set it up.
Bringing the kids
The kids' menu doubles as a coloring book. Every kids' entree is $9.95 and comes with fries and a fountain drink, and the options are named "I Don't Know" (chicken strips), "I Don't Care" (a burger), "I Don't Want That" (mac and cheese), "I Just Want a Hot Dog" and "I'm a Vegetarian Now" (grilled cheese).

What happened to Trifecta
Trifecta Sports Bar & Grill closed, and Google lists it as permanently closed. Border Burger took over the building as a separate business under its own name. Trifecta's old websites are still online and still advertise hours, but that's leftover marketing for a closed business.
