Bar Hummingbird: Castle Rock's Upscale Cocktail Lounge is Now Open
Castle Rock finally has something it's been missing — an upscale cocktail bar designed for the experience, not just the drinks.
Bar Hummingbird is now open at the Promenade at Castle Rock, right next door to The Brinkerhoff steakhouse. Same ownership, connected spaces, completely different vibes. Where The Brinkerhoff is a full-service Mexican steakhouse and sushi destination, Bar Hummingbird is built for craft cocktails, small bites, and lingering over sunset views of the Front Range.
They describe it as "an intimate sanctuary on the bluff" — and after visiting, that tracks.

The Concept
Bar Hummingbird draws inspiration from European cocktail culture — think the legendary Bar Hemingway in Paris. The goal isn't a loud bar scene. It's a place to slow down, enjoy a well-crafted drink, and actually have a conversation.
The space features an indoor lounge with crystal chandeliers, outdoor seating overlooking the foothills, and a private upstairs terrace for events and gatherings. The outdoor plaza connects directly to The Brinkerhoff next door.
Important: This is a 21+ only venue. No exceptions (except for occasional special events, which they'll announce).
What We Tried
We stuck to mocktails during our visit, and they didn't disappoint.
Coco Encanto — Seedlip, mint, lime, coconut cream, ginger beer. Genuinely one of the best drinks we've had in a while. Refreshing, balanced, and complex enough that you don't miss the alcohol.
Golden Hour — Solid. A good option if you want something lighter.
The Lobster Roll was next level. And honestly, the bread — baked fresh at The Brinkerhoff next door — was every bit as good as the lobster itself.

The Views
This might be the real draw. Bar Hummingbird is perched up at The Promenade with direct sightlines to the mountains. The outdoor space is oriented for sunset — and it delivers. If you've been looking for somewhere in Castle Rock to grab drinks with a view that isn't a brewery patio, this is it.

- The Hummingbird Cocktail ($23) — The namesake. Rose gin and pear vodka layered with elderflower, lemon, and apple.
- The Butte Old Fashioned ($18) — Woodford Reserve with cane simple and cocoa bitters. Named for the volcanic butte that gave Castle Rock its name.
- The Founders' Manhattan ($21) — WhistlePig 6 Yr. with sweet vermouth and walnut bitters. A tribute to Castle Rock's early settlers.
- The Plum Creek Sour ($20) — Woodford Rye, lemon, cane simple, egg white. Named for the creek that guided settlers through the valley.
- Bespoke Margarita ($24) — Build your own. Choose your tequila, fresh juice, and salt. Add serrano for "Jo's Way" (spicy).

What to Know Before You Go
Seating: First come, first served. No reservations. If the room is full, they maintain a waitlist and invite guests in as seats open. No standing room — they want to preserve the atmosphere.
Dress Code: Elevated casual. No ball caps, tank tops, flip-flops, or athletic attire. You don't need a suit, but dress like you're going somewhere nice.
Age: 21+ only. No exceptions.
Private Events: The upper terrace overlooking the foothills is available for private gatherings. Contact them to inquire.
The Name
Bar Hummingbird is an homage to Jo Brinkerhoff's Mexican heritage. Hummingbirds hold deep spiritual significance in Mexican culture — symbols of hope, love, and renewal. And Castle Rock happens to sit along natural hummingbird migration routes, making the name personal and rooted in place.
