Starbird Chicken Opens in Castle Rock April 27

Starbird Chicken's Castle Rock location opens Monday, April 27, 2026 with a grand opening from 5:00pm to 9:00pm. Regular hours after Monday are 10:00am – 10:00pm daily.

The restaurant is at the Promenade at Castle Rock, near Whole Foods. This is Starbird's second Colorado location — the first opened in Denver at 965 S Colorado Blvd in September 2025.

What to Expect

I went to the soft opening on Friday night. A few notes ahead of tomorrow.

The Cali Gold BBQ Bacon Sandwich was good — crispy chicken with bacon, slaw, pickles, and their Cali Gold BBQ sauce on a soft round bun. Heard solid things about the Nashville Hot from the next table over. On the sides, the Cool Elote Corn, Truffle Fries, and churros are all worth ordering. They also do a Chicken and Churros plate that comes with maple syrup.

For drinks, they have Alameda Point craft sodas on tap — pure cane sugar, small-batch, made in Alameda, California. Worth trying instead of the standard fountain options. They also do house-made lemonades and iced teas.

Gluten-Free Breading

The chicken is hand-breaded in a gluten-free flour blend — that's standard across their tenders, nuggets, wings, and crispy chicken sandwiches, not an alternative option. Worth knowing for celiacs that gluten is in the facility, so cross-contamination is possible. Full disclaimer is on Starbird's website.

Pickup Window, No Drive-Thru

The Castle Rock location has a dedicated pickup window for online and app orders, separate from the dine-in entrance. There is no drive-thru.

Patio Seating

The patio has yellow umbrellas and faces the Promenade walkway. Good spot when the weather's nice.
