Another sit-down spot is on its way to Park Meadows. Thirsty Lion Gastropub lists a Lone Tree location on its website with a banner that reads "Opening Late 2026!"

8335 Park Meadows Center Dr., Lone Tree, per the restaurant's Colorado locations page. It will be Thirsty Lion's second Colorado restaurant. The first is at Denver's Union Station.
What's on the menu
Thirsty Lion bills itself as a scratch kitchen with craft cocktails and beer. The current menu runs from starters like Crispy Calamari, Bacon Wrapped BBQ Shrimp and an Ahi Poke Stack to Miso & Orange Glazed Salmon, a Grilled Ribeye Steak, Fried Chicken Mac & Cheese and I.P.A. Beer Battered Fish & Chips. For dessert there's a Deep Dish Chocolate Porter Brownie.
There's also weekend brunch (Spicy Fried Chicken & Waffles and Irish Whiskey French Toast are on it). Happy hour runs 3-6pm every day, plus 9pm to close Thursday through Saturday. The draft list is "hand-selected for each region," so expect Colorado beers on tap.

Late 2026 is all they've said so far. No date, hours or phone number for Park Meadows yet. We'll update this when they post them.
