Cask & Trotter, a new restaurant from the owner of Wolf Peach, is under construction at The Juniper on Mainstreet in Parker. The opening is now targeting August 2026 (pushed from the originally-projected spring 2026 timeline).
Who's Behind It
Jeffrey Coyle, owner of Table 31 Hospitality and Wolf Peach Public House, is building out his second Parker restaurant. Wolf Peach has become one of Parker's most well-regarded dining spots, known for elevated casual dining, locally sourced ingredients, and a rotating seasonal menu.
