Cask & Trotter Is Coming to Mainstreet in Parker

Cask & Trotter, a new restaurant from the owner of Wolf Peach, is under construction at The Juniper on Mainstreet in Parker. The opening is expected in spring 2026.

Who's Behind It

Jeffrey Coyle, owner of Table 31 Hospitality and Wolf Peach Public House, is building out his second Parker restaurant. Wolf Peach has become one of Parker's most well-regarded dining spots, known for elevated casual dining, locally sourced ingredients, and a rotating seasonal menu.

Cask & Trotter is his next concept.

The name — Cask & Trotter — suggests a focus on whiskey and pork, though nothing has been officially confirmed.

Why It Matters

The Juniper is quickly becoming Parker's food destination. Poulette Bakeshop (a James Beard-nominated bakery) and Marvin's Place (a design-forward coffee shop) are already open or opening soon in the same building.

Cask & Trotter will anchor evening traffic. If it follows the Wolf Peach playbook — seasonal menus, local sourcing, elevated but approachable — it could become another standout in Parker's growing dining scene.
