Griddled Crêpes & Paninis opened to the public Friday, May 8, 2026 on the outer strip of the Outlets at Castle Rock, Suite 175 along 1st Street.
It's a new family-owned shop from Bri and Jacob Blaylock — the same family that runs the Rocky Mountain Chocolate Factory Café in Suite 820 at the Outlets, the first RMCF café concept in the United States, open since 2018. Griddled is their second concept at the same outlet center, about a 10-minute walk along the outer strip from the chocolate cafe.
The shop's tagline: Peak Flavor, Pressed to Perfection.
What We Tried
A few weeks in, Griddled is already sitting at 4.8 stars across 96 Google reviews. I headed out to the Outlets a few weeks after it opened and ended up staying a lot longer than planned. First visit, I went all in: the Trailblazer panini, the Nutella Mascarpone & Strawberry crêpe, and a Dulce de Leche latte. All three were worth a reorder. (Heads up — the Dulce de Leche latte isn't on the menu; order a flavored latte and ask for dulce de leche.) I went back a second time for the 34oz iced-coffee "bucket" and the Dubai Chocolate crêpe after seeing both on their Instagram.
What stuck with me as much as the food was who kept walking in. While I was there, Outlets staff introduced a coworker to the place for the first time, and another store employee came in for their second visit of the same day. The couple at the next table gave a running play-by-play — they were asking about the bread while I was asking about the produce, which tells you something about how much the ingredients matter here. A few weeks in, Griddled has already become the spot at the Outlets that the people who work nearby keep coming back to.
Owners Bri and Jacob Blaylock are as hands-on as it gets — you'll find Bri behind the counter and Jacob pressing paninis. They live right here in Red Hawk with their four kids and also run the Rocky Mountain Chocolate Factory Café down the strip. It plays as a genuine family spot, too: there were playdates and full family tables going while I was there, and they keep highchairs for the little ones. There's a dedicated to-go parking spot out front if you just want to grab and run, and with outlets throughout, it doubles as a work-from-anywhere stop.

What to Expect
Two main lanes — handcrafted crepes (sweet and savory) and pressed paninis on ciabatta — plus custom espresso drinks, smoothies, and a wide specialty-drink lineup. From griddledco.com:

The Blaylocks are well-established at the Outlets — eight years running RMCF Café before launching this second concept.
A useful menu wrinkle: most savory recipes are offered as either a crepe or a panini — same recipe, two formats. Order Buffalo Ridge folded into a house crepe, or pressed on ciabatta. Same for Trailblazer Club, Castlewood Bacon, Cabin Caprese, and Mount Cristo.

A clear Castle Rock / mountain naming theme runs through the savory side of the board:
- Buffalo Ridge — Chicken, mozzarella, red onions, ranch, and buffalo sauce inside the house crepe (or pressed on ciabatta).
- Trailblazer Club — Chicken, bacon, avocado, provolone, and balsamic mayo.
- Castlewood Bacon — Bacon, arugula, Roma tomato, Swiss, mayonnaise.
- Cabin Caprese — Mozzarella, Roma tomatoes, arugula, nut-free basil pesto, balsamic glaze drizzle.
- Mount Cristo — Ham, chicken, Swiss, raspberry jam inside the house crepe with powdered sugar on top.
- Summit Slice — Pepperoni and mozzarella inside the house crepe, served with house-made pizza sauce on the side.
