The Outlets at Castle Rock is getting a locally owned, New York-style pizzeria, with an arcade. Peak Pizza is setting up in Suite 660 at the Outlets at Castle Rock (5050 Factory Shops Blvd). Owner Allen Hoover told us on Oct. 6 they're aiming to open in mid-to-late October. There's no firm date yet.

What it is

Peak Pizza is fast casual: order at the counter, grab a slice from 8 to 10 whole pizzas kept ready, or have a whole pie made to order. There's takeout too, with online ordering planned. The menu runs pizza, roll-ups, strombolis, calzones, salads, pasta and soft-serve ice cream.

The space

About 2,500 square feet, with roughly 50 seats and 5 TVs, two of them in a separate lounge area, plus 5 to 7 arcade games supplied by Mile High Arcade. A local artist is painting a roughly 60-foot mural of Castle Rock inside: the rock and star, a Colorado flag and local touches. Outside, the storefront is wrapped in Peak Pizza's mountain-and-pizza graphics with "Coming Soon" across the windows, and more signage is in the works.

Allen and Katie Hoover also own the Auntie Anne's and Cinnabon at the Outlets, and ran Villa Pizza in the Outlets food court from 2021 until the food court closed in 2024.

Hours, beer and wine

Hours will be set by the mall and are tentative: Monday-Saturday 10am-8pm, Sunday 11am-6pm, which matches the Outlets' own store listing.

Beer and wine are part of the plan, pending its liquor license. A public notice posted at the Outlets office said Peak Pizza LLC had applied to the Town of Castle Rock for a beer and wine license at this address.
