A "Coming Soon" sign is up for a new Nicolo's Chicago Style Pizza in Highlands Ranch.
We stopped by 9338 Dorchester St, Suite 103 on Oct. 28 and found a red-and-white "Coming Soon! Nicolo's Chicago Style Pizza" poster taped in the window, with the phone number 303-791-9800. The storefront door was open, and inside we could see a generator and ongoing construction work.
A liquor license is already in the works
Posted next to the coming-soon poster is a public notice for a liquor license application. It reads, in part:
"BDHT LLC., d/b/a/ Nicolo's Chicago Style Pizza has requested the Douglas County Liquor Authority Board, grant a Hotel and Restaurant Liquor License at 9338 Dorchester Street, Suite 103, to dispense alcoholic beverages for consumption ON the premises. The Public Hearing on the application will be held in the Douglas County Hearing Room located at 100 Third Street, Castle Rock, CO 80104, on Monday, November 9, at 1:30 p.m. The public may attend the hearing virtually. Contact the Douglas County Liquor Clerk's Office for participation instructions at 303-660-7460 or [email protected]. Owner: BDHT LLC. Officers: Holly Schaefer. Date of Application: October 9, 2026."
That puts a real date on the calendar, the Nov. 9 hearing, even though an opening date for the restaurant itself hasn't been announced.
What we saw through the window
Looking in through the glass, it looked like pizza, maybe pasta, and a salad bar. We couldn't confirm an actual menu from the sidewalk, and construction was still underway.
Where it is
The space sits at 9338 Dorchester Street, Suite 103, in the same building as QDOBA Mexican Eats (9338 Dorchester St, Suite A104). Joy Batch Cookies & Coffee is nearby at 9315 Dorchester St.
The existing Nicolo's location
Nicolo's own website still lists its original Highlands Ranch restaurant at 9463 S University Blvd, serving "homemade pizzas and Italian food to the Highlands Ranch community since 1994," open daily 11 a.m. to 9 p.m. with takeout, free delivery and online ordering. The Dorchester Street location isn't mentioned on the site yet. The phone number on the new coming-soon poster, 303-791-9800, matches the number listed for the University Boulevard restaurant.
