7 Brew Is Nearly Finished on Castle Pines Parkway

The drive-thru coffee chain's Castle Pines building is up, the signage is installed and the lot is striped. The city's own development page still lists it as barely started.

7 Brew is close to opening in Castle Pines.

The drive-thru coffee chain is building at the southeast corner of Castle Pines Parkway and Debbie Lane, addressed 570 Castle Pines Parkway. When we stopped by on Aug. 23, 2026, the building was finished, the Seven Brew signage was mounted, and the lot was paved and striped with drive-thru arrows down.

What was left: bare dirt where the final landscaping goes, survey flags still in the ground, and a pallet of materials by the building.

It is not open. But it is much further along than the paperwork suggests.

We're ahead of the city's own page

The Castle Pines Connection's development roundup — the most complete public list of what's going up in the city — still has 7 Brew under "Recently Approved," with the note that "construction is currently expected to begin this summer."

That roundup was published May 28, 2026 and hasn't been revised since. Summer happened. The building went up.

This is worth knowing if you follow local development: those pages are monthly snapshots, not live trackers. The fastest way to know what's actually happening on a corner is to drive past it.

What's actually being built

Per the approved plans, this is a 510-square-foot, drive-thru-only shop — no public seating, running double drive-thru lanes. It's a small footprint by design; 7 Brew's model is stands, not cafés.

That makes it a different animal from the sit-down coffee nearby. Castle Pines already has Starbucks at 506 Castle Pines Parkway, Ziggi's on Lagae Road, and The Exchange Coffee House on Westbridge Drive. 7 Brew is competing for the commute, not the laptop.

It would be 7 Brew's first location in Douglas County. The nearest existing one is in Littleton, at 111 W Mineral Ave.

The corner is getting busy

7 Brew is one piece of a stretch of Castle Pines Parkway that's filling in fast. Also in the pipeline nearby:

  • QuikTrip — a 6,455 sq ft convenience store with fuel pumps proposed at the northwest corner of Castle Pines Parkway and the realigned S. Havana Street, under city staff review
  • AdventHealth Medical Office — a two-story building at Castle Pines Parkway and Canyon Forge Drive, with the ground floor planned for future emergency or urgent care
  • Life Time — the 102,000+ sq ft athletic club at Castle Pines Parkway and Canyonside Boulevard, expected to open later this year

Meanwhile the parkway itself is in the final stretch of a multi-year reconstruction, on schedule to finish in fall 2026.

One door down, a closure

Worth noting for anyone picturing this block: Alice + Kate Bakery, the boutique bakery at 572 Castle Pines Parkway, Suite A5, has closed permanently. Google lists the business as permanently closed and its online store is deactivated.

It opened in April 2024, run by Gretchen Harrison, selling small-batch caramels, macarons and handmade chocolates named for her grandmother Kate and aunt Alice.

We'll update this page

We're not writing a second article when 7 Brew opens — we'll update this one with the opening date, hours and menu, and the directory listing will go live with them.

If you see it open before we do, tell us.
