Hideaway Bar & Grill in Castle Rock Hit by Two Fires in Two Days — How to Help the Staff

Hideaway Bar & Grill — the family-owned bar and grill at 600 Jerry Street in Castle Rock — was hit by two fires in roughly 28 hours. The first started overnight Monday into Tuesday (May 11–12). The second started early Wednesday morning (May 13). No one was hurt in either fire. Castle Rock Fire Chief Norris Croom said Wednesday's fire was not a rekindle of Tuesday's. On Friday, May 15, Castle Rock Police announced formal charges of arson, trespassing, tampering, and theft against Caleb Bishop, 46, who had been identified by CRPD as a person of interest two days earlier. Bishop remains in custody at the Douglas County Sheriff's Office Detention Facility, and CRPD says the investigation remains ongoing. Bishop has not entered a plea and is presumed innocent unless and until convicted in court.

The Stroh family's GoFundMe for the 21-person staff has passed $28,070 of a raised $35,000 goal, with 255 donors as of June 1: donate to the staff fundraiser or share the link.

Update — Sunday, June 1: future uncertain, fundraiser goal raised

Three weeks after the second fire, the Stroh family has not announced whether Hideaway will reopen. In her latest GoFundMe update, Becky Stroh wrote:

We've added a few pictures taken by us of just some of the damage to our beloved Hideaway. There were 2 separate fires started within 36 hours. At this time, we are still waiting on all the necessary steps to be completed regarding how severe the damage is & what our future even looks like. We are all completely devastated by this. All love & support is greatly appreciated & will go to our amazing staff to get through what has been an extremely stressful time. Thank you from the bottom of our hearts.

The Hideaway website at hideawaybarandgrill.com has been updated to a more permanent-sounding closure note:

Due to 2 separate fires in less than 30 hours of each other, we are closed indefinitely. More information can be found on our Facebook page as well as news coverage regarding these events. We are going to deeply miss serving our beloved community.

Fundraiser progress since the last update: the GoFundMe has moved from $24,900 raised against a $28,000 goal (May 18, 226 donors) to $28,070 raised against a $35,000 goal (June 1, 255 donors). The Strohs raised the goal as donations came in. The fundraiser remains active.

Update — June 27: community benefit at Alidade Brewing

On Saturday, June 27, Alidade Brewing in Castle Rock hosts From the Ashes: Hideaway Bar & Grill Benefit from 3 to 6 p.m. — a free community fundraiser for Becky, Bob, and the Hideaway staff. The afternoon features the John Saunders Band, drink specials, and food trucks. Free to attend, with donations welcomed to support the Hideaway family and crew.

Timeline of Both Fires

Fire #1 — Tuesday, May 12, ~12:30 a.m. Castle Rock Fire and Rescue Department (CRFD) crews responded to the Hideaway for a structure fire. First-arriving units found fire showing and began "aggressive operations to search the business and save property." Damage was concentrated in the kitchen area at the back of the building. No injuries. Owner Bob Stroh told Denver7 his alarm company called him at 12:30 a.m. when the panel went off and power dropped. He called the police thinking it was a power outage or attempted break-in — only to learn fire crews were already on scene.

Fire #2 — Wednesday, May 13, 3:51 a.m. CRFD responded to the same address again. Crews had it under control by 5:15 a.m., per CRFD. An adjacent building sustained minor heat damage. CRFD Chief Norris Croom told 9NEWS that Wednesday's fire was not a rekindle of Tuesday's — meaning two separate ignition events at the same address, roughly a day apart. Per Denver7, the second fire damaged a different side of the building than Monday night's kitchen-area fire — Bob Stroh's interior walk-around with firefighters confirmed the rear-roof damage "looked structural" and reached the second floor.

A detail that matters: per Becky Stroh's post on the official Hideaway Bar & Grill Facebook page, "there has been no electricity or gas on since the first fire." The second fire ignited at a building with the utilities already shut off.

What I Saw on Scene — Wednesday Morning

I stopped by this morning around 8:30, roughly five hours after CRFD's second dispatch. Could still smell the smoke in the air. Two fire engines and another fire truck were on site, along with one police vehicle. Yellow scene tape was up across the front. Some personnel were on scene. I didn't see the owners or staff, and one news crew was set up out front. Otherwise the block was quiet — neighboring businesses appeared open and one person parked and walked into a nearby office.

From the sidewalk, the front of the building was still standing — roof, A-frame dormers, exterior walls and chimney all intact. Owner Bob Stroh, who walked the back of the building with firefighters, told 9NEWS the rear damage from the second fire "looked structural" and reached the second floor.

What Investigators Are Saying

Per the CBS Colorado interview with owner Robert ("Bob") Stroh, investigators said the first fire started outside the building, which is why CRFD has been treating it as suspicious. Bob told CBS, "They did say it started outside, it wasn't, like, a fire that started inside, so that's why they're treating it as a suspicious fire, and I'm assuming that's how they're treating it again today… In retrospect of yesterday, it was suspicious yesterday; it was suspicious today."

Castle Rock Police told KDVR they are pursuing leads, and that "an individual was taken into custody on other charges but is currently considered a person of interest." Becky Stroh's Hideaway Facebook post on Wednesday morning confirmed the same: "They said they do have someone in custody right now and we're waiting for state & federal investigators to arrive."

Update — Thursday, May 14: more on the person in custody

Per a follow-up Facebook post from co-owner Becky Stroh on the Hideaway Bar & Grill Facebook page, the person already in custody was originally arrested on a separate charge of attempted residential burglary in Castle Rock's Western Lights subdivision at approximately 12:30 a.m. Tuesday morning — the same hours CRFD was responding to the first fire at the Hideaway, less than two miles away.

Becky's post characterizes the same individual as alleged to have been prowling the Hideaway parking lot before the first fire, and says he allegedly left a Google review on the restaurant the Sunday before. None of that has been formally confirmed by Castle Rock Police or CRFD.

Update — Friday, May 15: formal arson charges filed against Caleb Bishop

On Friday, the Castle Rock Police Department announced formal charges in connection with the May 12–13 fires against Caleb Bishop, 46. Per CRPD, the charges include arson, trespassing, tampering, and theft. Bishop is being held at the Douglas County Sheriff's Office Detention Facility.

The CRPD release lays out the timeline. Bishop was originally arrested Monday, May 11, for trespassing at the location of two fires, and released approximately 12 hours later on a personal recognizance bond. He was re-arrested on May 13 on other charges, at which point CRPD named him a person of interest in the arson investigation. Formal arson and related charges followed on May 15.

Police Chief Jack Cauley credited the work of patrol officers, detectives, and partner agencies, including Castle Rock Fire and Rescue: "Their quick response, attention to detail and commitment to public safety were instrumental in identifying and charging a dangerous individual, helping make our community safer." On the investigation, Chief Cauley added: "Technology and video evidence played a critical role in this case. Multiple members of our department worked together to piece together and verify information from several sources, helping establish probable cause and identify the suspect."

CRPD says the investigation remains ongoing and no additional details are being released at this time. CRFD has not released a damage assessment for either fire and the cause of both fires remains under active investigation.

Bishop has not entered a plea and is presumed innocent unless and until convicted in court. We are reporting the name now that formal charges have been filed and the arresting agency has made the name public via press release.

Bob and Becky Stroh launched a GoFundMe titled "Support Restaurant Staff After Fire." The campaign has passed $28,070 of a raised $35,000 goal, with 255 donors as of June 1, 2026 (the goal was originally set at $24,000 and has been increased twice by the Stroh family as donations have come in). Funds will be distributed directly to the 21 staff members — cooks, servers, bartenders, and back-of-house — to cover rent, groceries, and living expenses while they're out of work.

A note from Becky's Wednesday Facebook post that's worth quoting in full because it heads off the most common misconception:

Before the insurance payout comments start, we have received NO insurance payments and we have no idea what that will be for any of us. Our staff have bills & living expenses right now & can't wait for whatever may or may not come from insurance.

About the Stroh Family

Bob and Becky Stroh have run the Hideaway for 15 years. Bob has been in the restaurant business for 40 years, starting in corporate restaurants before opening their own place on Jerry Street. Becky framed the loss in family terms in her interview with 9NEWS:

It's not just Bob and I and our family, our children — it's our entire staff, our entire Hideaway family. Some of our staff have been here since just a few months after we opened, and they've still worked here.

Bob, to KDVR:

I just don't understand it. I've been in the restaurant business for 40 years… my wife and I put our heart and soul into this for 15 years, and it just feels like it's all kind of been taken away from us in the blink of an eye.

After the second fire, Bob told 9NEWS:

It's just a shock. I can't believe two nights in a row this happened. It almost feels like we're being attacked.

What's Next

The cause of both fires is still being determined. Bob told KDVR after the second fire: "Honestly, it's a complete loss. Yesterday, I thought, you know, we look forward to rebuilding and just fixing the kitchen. After this, I don't know what we're going to do." In Becky's latest June 1 GoFundMe update, the Strohs say they are "still waiting on all the necessary steps to be completed regarding how severe the damage is & what our future even looks like." No reopening timeline has been shared, and the Hideaway website is now marked closed indefinitely.
