Castle Pines' most-watched empty restaurant space is empty no more.
Castello Italiano has soft-opened at 361 Village Square Ln, Suite 130 — the spot across from the Castle Pines library that housed Pino's Italian Kitchen & Bar for two decades. It's an upscale Italian restaurant from the owners of Farro Italian Restaurant in Centennial, a connection Castello states itself: "our newest creation, brought to you by the owners of Farro Italian Restaurant."
Neighbors report the soft opening happened Monday, Aug. 31, and by midweek the menu was making the rounds on Nextdoor. Google lists the restaurant as open, and online ordering is live for scheduled pickup.
The menu
The dinner menu runs genuinely upscale for Castle Pines:
- Small plates: P.E.I. mussels ($18), sizzling garlic shrimp ($16), baked brie with prosciutto and fig compote ($18), flash-fried calamari ($18)
- Pasta ($19–34): a white bolognese with pappardelle, soffritto, Angus chuck and Italian sausage ($27), bison short rib ravioli in vodka cream sauce ($27), wild boar ragu — cinghiale — over pappardelle ($27), and a linguine di mare loaded with mussels, clams, fish, calamari, shrimp and scallops ($34). Fresh pasta or fresh gluten-free pasta is +$5 on any dish.
- Entrées ($24–55): chicken piccata ($27), veal marsala ($33), lamb shank ($39), cioppino ($33), truffle risotto ($29), sea bass ($33), and a 16-oz Black Angus ribeye ($55)
The space it fills
This opening closes a two-year hole in Castle Pines dining. Pino's — which opened under a different name back in 2003 — shut its doors at the end of September 2024 and filed for Chapter 7 bankruptcy days later, per BusinessDen's reporting. The Village Square storefront sat dark ever since, while its neighbors — Duke's Steakhouse, Pho 5, and Alta Empanada — carried the center.
What we don't know yet
Hours aren't published anywhere yet — not on castelloitaliano.com, not on the Google listing — and no grand opening date has been announced. The online ordering page is pickup-only, scheduled orders.
