Griddled Crêpes & Paninis is a brand-new family-owned cafe on the outer strip of the Outlets at Castle Rock, opened May 8, 2026 in Suite 175 along 1st Street. Owned by Bri and Jacob Blaylock — the same family behind the Rocky Mountain Chocolate Factory Café in Suite 820 — Griddled is their second concept at the same outlet center.
The menu splits cleanly into handcrafted crepes (sweet and savory), pressed paninis on ciabatta, custom espresso drinks, smoothies, and 16 specialty caffeinated drinks. Many savory items are offered as either a crepe or a panini — same recipe, two formats. Tagline: Peak Flavor, Pressed to Perfection.

On a DougCo Social visit a few weeks in, Outlets staff were bringing coworkers in for the first time and a store employee stopped back for a second visit the same day — the kind of repeat traffic that's the strongest early signal a new spot can give.
