The Rocky Mountain Chocolate Factory Café at the Outlets at Castle Rock is the first RMCF café concept in the United States — opened in 2018 by Bri and Jacob Blaylock in Suite 820. The Blaylocks paired the iconic Rocky Mountain Chocolate Factory candy case with a full specialty-coffee bar, turning a classic chocolate stop into a sit-and-stay destination.
The cafe pours custom espresso drinks, lattes, mochas, and specialty beverages alongside the full RMCF chocolate counter — caramel apples, hand-dipped truffles, fudge, chocolate-covered strawberries, and seasonal candy boxes. Mission per the brand: "Stay and enjoy specialty coffee beverages alongside mountain-sized, handcrafted chocolates."
In May 2026 the Blaylocks expanded with a second concept at the same outlet center: Griddled Crêpes & Paninis in Suite 175.
