Castello Italiano soft-opened in early September 2026 at 361 Village Square Ln, Suite 130, the space across from the Castle Pines library that housed Pino's Italian Kitchen & Bar for two decades before it closed in 2024. It comes from the owners of Farro Italian Restaurant in Centennial — in Castello's own words, "our newest creation."

The dinner menu runs upscale: a white bolognese with pappardelle ($27), bison short rib ravioli in vodka cream sauce ($27), wild boar ragu over pappardelle ($27), linguine di mare ($34), and entrées from chicken piccata ($27) to lamb shank ($39) and a 16-oz Black Angus ribeye ($55). Fresh pasta or fresh gluten-free pasta is +$5 on any pasta dish.
