"Castle Pines, the wait is over!" Castello Italiano officially opened in early September 2026 at 361 Village Square Ln, Suite 130, the space across from the Castle Pines library that housed Pino’s Italian Kitchen & Bar for two decades before it closed in 2024. It comes from the family behind Farro Italian Restaurant in Centennial (running since 2008) — in Castello’s own words, "our newest creation." Walk-ins are welcome and reservations are recommended.

The dinner menu runs upscale: a white bolognese with pappardelle ($27), bison short rib ravioli in vodka cream sauce ($27), wild boar ragu over pappardelle ($27), linguine di mare ($34), and entrées from chicken piccata ($27) to lamb shank ($39) and a 16-oz Black Angus ribeye ($55). Fresh pasta or fresh gluten-free pasta is +$5 on any pasta dish.

Dinner only, closed Mondays — 4–9 PM Tuesday through Saturday, 4–8 PM Sunday, confirmed at the restaurant on our Sept. 3 visit. No happy hour or lunch is planned. Reservations are live, or use the restaurant’s online ordering (scheduled pickup). Its neighbors in the same center include Duke’s Steakhouse, Pho 5, and Alta Empanada.

Connor’s Visit — Sept. 3, 2026 (opening week, night three of full service): Bar seat. "The bison short rib ravioli was really good" — ordered the wild boar on the bartender’s recommendation, the bison came out instead, opening-week kinks and no complaints. The Caesar with anchovies (~$10) is "not so big it takes over your meal," the sunrise mocktail was "actually pretty good," and he ordered both desserts: the crème brûlée is solid, the Italian lemon cake is the one he’ll order again. No bread service yet and the entrée landed with the salad — they’d been fully open for two days, so give them a little love if the first run isn’t perfect.
