About the Role
Lead chef and kitchen manager for Champagne Velvet Proper Kitchen & Bar. Sets the culinary tone, controls food cost and labor, manages BOH staff, and partners with the GM to deliver Upland's philosophy of fresh, local, sustainable ingredients paired with award-winning beers.
Responsibilities
- Track food inventory, manage storage, place orders, examine deliveries
- Monitor kitchen and restaurant operations; oversee quality and portion control
- Control costs and adjust systems; create procedures to control waste
- Monitor labor hours; supervise workflow and analyze systems for efficiency
- Train staff on stock rotation, prep, plating, and proper cooking techniques
- Update order guides, prep lists, par levels, recipe yields
- Create weekly BOH staff schedules and adjust labor to business volume
- Recruit and develop kitchen staff; provide GM with reviews and compensation recommendations
- Coordinate preventative maintenance and health/sanitation compliance
Requirements
- Experience leading a restaurant kitchen as Executive Chef or equivalent
- Strong financial literacy — food cost, labor cost, P&L review
- Recipe development and yield/portion control expertise
- Hiring, training, and performance management experience
- Health-and-safety code knowledge and enforcement
- Able to stand for several hours, work past 10 PM, lift kegs with help and 20+ lbs occasionally
