Why this role might be a fit

New restaurant opening — get in on the ground floor of a refined American concept from Upland Brewing Company (Indiana craft beer pioneer since 1998). The menu is anchored by Upland's historic Champagne Velvet pilsner, a 1902 pre-Prohibition recipe revived in 2013. Replaces the former I.C. Brewhouse at 2355 Mercantile St in Castle Rock. You're building the kitchen culture from day one — recipes, prep lists, par levels, line organization. Menu is already published (CV-braised salmon, 1902 burger, Million Dollar Reuben, Maple Leaf Duck, dry-aged steaks) so you're executing a defined vision, not inventing one.
