🍴 OPEN SINCE SUNDAY, MAY 17, 2026. Champagne Velvet Proper Kitchen & Bar is the Castle Rock rebrand of the former I.C. Brewhouse at 2355 Mercantile St — taking its name from Upland Brewing's flagship pilsner, first brewed in Indiana in 1902 by Walter Bruhn at the Terre Haute Brewing Company and revived by Upland in 2013. Reservations live via OpenTable; walk-ins also accepted.
