Cask & Trotter is a new restaurant from Jeffrey Coyle, owner of Table 31 Hospitality and Wolf Peach Public House, under construction at The Juniper on Mainstreet in Parker. A navy "CASK + Trotter" sign went up over the entrance in October 2026, and the opening still looks like the end of the year.

The space is 5,000 square feet with an open-concept layout. Construction permits filed with the Town of Parker show a $216,695 commercial tenant finish permit and a $147,500 electrical permit. The menu is described as "highly seasonal, regional," rotating every 6 to 8 weeks, with a "rustic and approachable" vibe.

Cask & Trotter shares The Juniper building with Marvin's Place, Poulette Bakeshop, and Playa Bowls.
