Now Open — Bar Hummingbird is now open at the Promenade at Castle Rock, right next door to The Brinkerhoff steakhouse. Same ownership, connected spaces, completely different vibes. Where The Brinkerhoff is a full-service Mexican steakhouse and sushi destination, Bar Hummingbird is built for craft cocktails, small bites, and lingering over sunset views of the Front Range.

The Concept: Bar Hummingbird draws inspiration from European cocktail culture — think the legendary Bar Hemingway in Paris. The goal isn't a loud bar scene. It's a place to slow down, enjoy a well-crafted drink, and actually have a conversation. The space features an indoor lounge with crystal chandeliers, outdoor seating overlooking the foothills, and a private upstairs terrace for events.

The Setting: Built with cantera stone sourced from Mexico and featuring aqueduct-styled architectural elements, Bar Hummingbird offers sweeping views of Sleeping Indian Mountain, the Front Range, and Colorado's legendary sunsets. The two-story design maximizes these mountain vistas while providing flexible event configurations.

The Hospitality Legacy: Bar Hummingbird represents the latest chapter from the Brinkerhoff family, whose hospitality roots run deep in Colorado. The family created La Loma (now Savina's Mexican Kitchen), Sierra, and Caldéro. The Brinkerhoff restaurant next door — a Mexican steakhouse with sushi — opened September 2025 to strong reviews.
