The property opened in 2020 after Leah and Todd Hills fully renovated the historic Johnson's Corner truck-stop site at 5607 US-85.

New as of May 2026: Denver-based Riot BBQ — the collaboration between Michelin-recognized pitmaster Patrick Klaiber and James Beard nominee Manny Barella — has taken over the saloon's kitchen as its exclusive culinary partner. Soft launch was May 1; the official kickoff is an invite-only preview dinner on Friday, May 15. The menu now blends traditional Texas barbecue (beef brisket, pork shoulder, sausage links) with the live-fire traditions and flavors of Northern Mexico.
