The experience

KB Ranch sits on open acreage in Castle Rock with sweeping Front Range views — home to Highland cows, Valais Blacknose sheep, fainting goats, and mini donkeys. The animals are fenced right alongside the dinner, so come early to say hi, pet them, and grab a few photos before the sun drops. A few nights this summer, Chef Juwanza of Southern Jewel Hospitality turns that backdrop into a four-course dinner under the open sky, each course paired with a craft beer or cocktail depending on the night. You don't pick a menu — the chef builds a new one around the season every time, so it's a surprise. Good food, good drinks, good company, golden-hour views, communal seating. Limited seats a night, so they fill up fast.

Meet the chef (and the bar)

Chef Juwanza Thomas — Southern Jewel Hospitality

Juwanza grew up in central Arkansas, learning to cook from his grandmother. Her name was Jewel — which is where the company gets its name. That Southern foundation followed him through kitchens in Dallas, Houston, and Austin, where he was a head chef in a James Beard–nominated restaurant group and built range across Italian, French, Japanese, Mexican, and Southwest cooking. In Colorado he went deep on the hands-on craft — butchery, bread, pastry, open-fire cooking, and a farm-to-fork approach — and founded Southern Jewel in 2022. These supper club nights are where all of it comes together: a table he cooks for like guests in his own home.

The pairings

The upcoming nights are beer-paired — a craft beer from Alidade Brewing, right here in Castle Rock, matched to each course. On the cocktail nights, Jaco of Intoxicology Mobile Mixology runs the bar (“craft cocktails without the craft attitude”) with a handcrafted cocktail per course. Either way, every pour is built around the season to match whatever Juwanza is serving.

A taste of the first dinner

Every dinner is a surprise — a brand-new menu built around the season. But to give you a feel for the caliber, here's the four-course lineup Chef Juwanza and the bar ran at the very first dinner:

  1. First course

    Crispy tuna oni-tostada

    Paired with a Shochu 75 (a Japanese twist on a French 75)

  2. Second course

    Surf-and-turf salad — shaved steak, smoked catfish, cotija, and Mayan ash sauce

    Paired with a Gin New York Sour

  3. Third course

    BBQ shrimp, chile grit cake, Tasso gravy, and the chef's homemade hot sauce

    Paired with a Lychee Margarita

  4. Fourth course

    Caramel cake with smoked ice cream and molasses toffee

    Paired with a Tawny Port Manhattan with black walnut

Where is it?

KB Ranch — 579 South Mountain View Road, Castle Rock, CO 80109. It's an outdoor evening on the ranch.

What time does it start?

Dinners run 6:30 to 8:30 PM. Come around 6:00 to walk the property and meet the animals before we sit down.

Can we see the animals?

Yes! The Highland cows, sheep, goats, and mini donkeys are fenced right next to the dinner. Come around 6:00 to pet them and grab some photos before the meal starts.

What if the weather turns?

The dinner is rain or shine — open-air under the sky by default. If the weather turns, they can tent it, with side walls added if needed.

What will be served?

That's half the fun — the exact menu is a surprise. Chef Juwanza builds a brand-new four-course menu around the season for every dinner, generally spanning seafood, beef, and a vegetarian course, with printed menus set at each seat that night. The dishes change each time and aren't revealed until you're there — you're along for whatever he's creating.

What about drinks?

It depends on the night. The upcoming nights are beer-paired — a craft beer from Alidade Brewing in Castle Rock matched to each course. (The cocktail-paired nights this summer sold out.) Either way, it's pairings only, with no separate bar.

Are there non-alcoholic options?

Yes. The beer-paired nights include non-alcoholic beer options from Alidade, and on the cocktail nights most drinks can be made as mocktails. Just note your preference when you reserve.

Can you do gluten-free or dairy-free?

Yes — most dietary needs can be accommodated with advance notice. About 90% of the menu is naturally gluten-free and other items can usually be modified. You'll enter any allergies or restrictions right on the reservation form at checkout, so the chef has them ahead of time (true dietary needs, not personal preferences).

Yes — the Supper Club is a 21+ evening.

What if I can’t make it?

Full payment reserves your seat at checkout. If you need to cancel, it has to be by email or phone at least 72 hours before the dinner.

What should I wear?

It's an elevated evening, so feel free to dress up. You're outdoors on the ranch though, so closed-toe shoes are smart and bring a layer for when the sun drops.
