The Human Development Fund (HDF) is fully funding Sunday Salmon's Wednesday Wheels meal-delivery program in Castle Rock for two months, according to an HDF press release. The funding lets the nonprofit restore weekly deliveries after rising costs had forced it to cut back.
What Wednesday Wheels Does
Wednesday Wheels delivers organic, allergy-friendly meals to seniors on limited incomes, adults with intellectual and developmental disabilities, and families facing food insecurity. Per HDF's release, rising costs had forced Sunday Salmon to cut deliveries to every other week, and the program's waiting list had grown to 80 people.
What the Funding Changed
With HDF's support:
- Weekly deliveries have resumed
- Meals delivered per week rose to 210, up from about 180
- 30 additional people were moved off the waiting list
- The waiting list fell from 80 to 50
- The funding covers two months of full program costs
HDF founder and CEO Abdirahman Kariye said, "Humanitarian service begins with recognizing the dignity and needs of every individual."
About the Organizations
Sunday Salmon was founded by Mary Grothe and opened in January 2025. Per HDF's release, it served nearly 20,000 free meals in its first year and now provides about 1,000 meals a week across community dinners, school meals and delivery programs. It's part of our guide to Douglas County nonprofits.
The Human Development Fund is a U.S.-based humanitarian and development organization that says it served more than 3.5 million people and provided more than 1 million hot meals through its international programs in 2025. HDF says this partnership extends that work into communities in the United States.
