JP Cocina & Cantina in Parker marks Mexican Independence with a live Grito de Dolores — the cry that opens Independence celebrations — at 11160 S Pikes Peak Dr. In the restaurant's own words: "Grab the family, grab the friends and come enjoy in the most authentic way we can offer w/ incredible cuisine and life changing margaritas!" A public event hosted by the restaurant; no cover charge, food and drinks are regular menu prices.

Mexican restaurant and cantina from Jose Poblano of El Poblano Mexican Eats — open August 2026 in the old Wild Goose Saloon at 11160 S Pikes Peak Dr in Parker. Open 10am to midnight Sunday through Wednesday and 10am to 2am Thursday through Saturday, same menu all day. A happy hour is planned but not running yet. Two stages, one indoors and one out back in a turf beer garden.
