Connor’s Visit (August 2026): “I found out JP Cocina & Cantina was opening up yesterday, dropped everything (literally nothing), and crashed their party. Street corn and the ribeye tacos: 👌.” (DougCo Drop, August 20, 2026)
JP Cocina & Cantina soft-opened Monday, August 17, 2026 and had its grand opening that Wednesday. It's the third and biggest spot from Jose Poblano — the JP on the sign — who started with a food truck in March 2021 and one employee, and was up to twelve people by the end of that first year. That truck is El Poblano Mexican Eats on Dransfeldt Rd. He also runs The Perfect Time Cafe on S Parker Road. Chef Fernando Ortiz runs the kitchen here.
The menu goes well past taqueria basics. Street tacos start at $4, and the entrees run arrachera, ribeye tacos served with a roasted bone marrow standing up on the plate, carne asada, birria, chile rellenos with shrimp, plus ceviche and aguachile and a $24 seafood soup with shrimp, octopus, crab legs and fish. Same menu all day — no separate lunch or brunch. Margaritas are shaken to order, and the tequila list behind the bar is deep.

📍 Local Insights
🌽 The $7 Elote Is the Best Thing We Ordered: Listed as Street Corn. It comes off the cob, kernels piled into an open corn husk under cotija and salsa macha, with chips carrying the same cotija and macha. The macha isn't punishing if you're heat-averse.
🥖 Jose's Picks Are the Arrachera and the Ceviche: Ask the owner what to order and that's the answer. The $23 ribeye tacos come with a roasted bone marrow standing straight up on the plate, and they're worth getting too.
🍹 $13 Margaritas, $18 for the Perfect Coin: Shaken to order. The Upscale section tops out at $18, where the Perfect Coin Margarita sits — built on Comonfort Añejo, and the one Jose points to.
🕛 Open 10am to Midnight, 2am Thursday Through Saturday: Same menu the whole time, so the arrachera is available at 10:30 in the morning if that’s your thing. The late close is genuinely rare in Parker.
🐦 It's the Old Wild Goose Saloon: Same building, same bones, same stage. There's even still a Wild Goose Saloon painted on one of the walls, which presumably has to come down at some point.
🎸 Hendrix, B.B. King, Hank Williams and Freddie Mercury on the Walls: Hendrix over the back bar, B.B. King with Lucille, Hank Williams by the photo wall, and Freddie above the back exit in the yellow jacket with “We Will” and “Rock You” painted either side of him.
📺 The Screens Are Still Up: The TVs from the Wild Goose days are still there — the Cincinnati Open was on when we visited, so expect games.
🔥 The Beer Garden Out Back: Turf, whiskey-barrel tables, fire-pit tables, string lights, and a second stage facing it.
🅿️ Easy Parking: The building has its own lot off Parker Road next to Best Buy — much simpler than downtown Mainstreet.

"We went on grand opening day, August 19, 2026. The $7 elote was the standout and one of the best around here. The $23 ribeye tacos are the other order — the ribeye is the focus and it's very good, and the roasted bone marrow that comes standing on the plate is worth eating even if you think it isn't your thing. Margaritas are shaken to order and the tequila list runs deep. Owner Jose Poblano points to the arrachera and the ceviche, and says he plans to be on site seven days a week while it gets going."

📆 Best Times to Visit
Open 10am to midnight Sunday through Wednesday and 10am to 2am Thursday through Saturday, with the same menu the whole time. The late Thursday-through-Saturday close is the best late-night window in this part of Parker, and the beer garden out back is the move on a warm evening.
