Izumi opened May 11, 2026 with a friends-and-family invite night and quietly soft-opened to the public the same week. As of late June 2026 it is still running as a soft open and has not yet held its official grand opening — full menu, sushi bar, and bar service are all up and running in the meantime. Reservations are accepted by phone at (720) 749-6172.
The positioning is authentic Japanese — fish-forward, never-frozen, bluefin tuna only, real crab in the California rolls. Not the spicy-mayo-and-cream-cheese style most American sushi spots run. Owner Manna Pan also runs the Izumi Sushi in Littleton, which serves the more American-style menu. Castle Rock is the authentic-leaning concept.

Lunch service runs 11am–3pm; reopens for dinner at 5pm — closed daily in between. Weekday dinners (Tue–Thu) are quieter than weekends. Reservations accepted by phone; omakase tasting requires a reservation at least 3 days in advance (a full week for $200+ orders). Patio still to come.
