Rugby Scott is a family-owned Colorado butcher and provisions shop that soft-opened on Parker's Mainstreet in summer 2026, in the old Parker Chamber of Commerce building on the corner of Mainstreet and Pikes Peak Drive. It is built around American Wagyu and Black Angus beef, with heritage Kurobuta pork, lamb, and a deli counter.

The name traces to two family ranching homes: Rugby, North Dakota, where the Tuchscherer family homesteaded 160 acres in 1884, and Fort Scott, Kansas. Five generations later, Denver physician Dr. Ryan "Tuck" Tuchscherer turned that ranching heritage into the Rugby Scott brand, now with five locations across the Front Range.

The cases run from ribeye, filet, picanha, and Wagyu bavette (the "poor man's sirloin") to a showpiece "Thor's Hammer" beef shank, plus brisket, short ribs, ground beef, jerky, and beef sticks. Kurobuta pork covers spare ribs, tenderloin, and thick-cut bacon. The shelves add Colorado-made sauces and seasonings, farm-fresh eggs, Hammond's candy, cheeses, and pantry goods to build your own charcuterie, along with dog treats including Wagyu bones. A deli counter with house-made sides (coleslaw, potato salad, tater kegs) and a whiskey and spirits wall are on the way as the build-out finishes.

During the soft opening, hours run Wednesday to Friday 11am to 7pm, Saturday 9am to 7pm, and Sunday 9am to 5pm (closed Monday and Tuesday); confirm at rugbyscott.com as they may shift. The team has talked about eventually adding a rail to connect through to SuBourbon, the whiskey bar and restaurant going in next door in the same old Chamber building (a future idea, not yet in the works).
