Coming soon to Castle Rock. Chicken Salad Chick, the Southern-style fast-casual chain known for scratch-made chicken salad in a dozen-plus flavors, is under construction in the Meadows neighborhood — near the movie theater and across from the hospitals, just off Meadows Parkway. Construction began in late June 2026. (Read our coverage.)
The location will feature a patio and a drive-thru, plus dine-in and takeout. It is a woman-owned franchise run by Maureen McFerson and her husband Luke Hadden; it is their third Colorado location, after Littleton and the Denver Tech Center (opened March 2026), with Parker also planned.
The menu centers on a dozen-plus flavors of chicken salad — from the original Classic Carol to Fancy Nancy, Sassy Scotty, and Buffalo Barclay — alongside sandwiches, soups, sides, and desserts, made from scratch daily.
